Just a quick breakfast meal prep this week since I have been on vacation and it was the Fourth of July weekend. These breakfast egg muffins are so good and so versatile! They are great for those of you following a keto or low-carb diet at only 1 net carb for 2 egg muffins! I am currently following the WW blue program but I try to give the points and calories for all programs and be versatile for all plans and programs. 🙂

Here’s how I made them this time:
Serves 6 (makes 12 egg muffins – 2 egg muffins per serving)
LOW-CARB BREAKFAST EGG MUFFINS 💙4 | 💜4 | 💚8 (270 calories and only 1 carb for 2)
12 eggs
12 slices Canadian bacon
1-1/2 cups reduced-fat cheese
veggies of choice
Spray muffin tin generously with cooking spray.
Push a slice of Canadian bacon into each muffin tin (you may need to break it apart to sit it down in the bottom)
Top each with a little bit of cheese (you’ll use half the cheese now and half on the top)
Whisk together eggs and add seasonings of choice (I just used salt and pepper)
Pour eggs into each muffin tin.
Top with remaining cheese.
Bake in 350-degree oven for approximately 15 minutes.
Let cool. Enjoy!
