This homemade keto vegan bread is soft, moist and satisfying. It’s low in carb, high in protein and most comforting to eat. If you’re on keto and need a bread fix, this recipe is for you. Stay active and stay safe everyone X
*1 cups (175g) vital wheat gluten per cup
*1 cups (120g) super fine (extra fine) almond flour
*1/4 cup (30g) Ground flaxseeds
*1 tbsp sweetener (I used stevia)
*1 tsp salt
*1.5 tsps baking powder
4 tablespoons olive oil (or melted coconut oil)
2 tsps dry (fast action) yeast
1 cup warm water (may need less)
Add all dry ingredients (*) in a mixing bowl. Add in olive oil and yeast on the opposite side of the bowl. Pour in warm water little by little while mixing till it reaches a sticky yet firm texture.
Knead the mixture for 5-10mins till it forms into a dough ball. Place the dough ball in a bowl (greased or line with a tea towel) and proof for 1 hour (minimum).
Preheat the oven to 180C (350F) and bake the bread dough for 30-35mins (soft crust – hard crust).
