LOW CARB SCALLOP RECIPE│Healthy 10 Minute Recipes

Today we are making scallops! This recipe comes together in under 10 minutes! Perfect for a busy work or school night. It is packed with flavor, nutrition, and is also LOW CARB! 3-5 Large Sea Scallops
2 Medium Zucchini
Handful Fresh Asparagus
1 cup Vodka Sauce
¼ cup Ricotta Cheese
Salt & Pepper to Taste
Sprinkle of Garlic Powder
Drizzle of Olive Oil
Splash of Water
Grated Pecorino Romano for Garnish (optional)

Spiralize zucchini. Set a pan over medium high heat and add a drizzle of olive oil. When hot, add scallops. Sprinkle with salt, pepper, and garlic powder to taste. Cook for 1-3 minutes, then flip over. Add a little more olive oil if desired. Flip scallops over after 1-3 minutes more. Sear the sides of each scallop for roughly 20-45 seconds. Remove scallops once desired doneness is achieved. Add a little water to the pan and empty the pan. Add asparagus. Add a splash of water, salt, pepper and garlic powder. Allow to steam until desired doneness and water burns off. Add a drizzle of olive oil. Remove from the pan. Add vodka sauce and zoodles. Add ricotta cheese. Cook until sauce is warmed through and zoodles are to your desired doneness. Plate up and top zoodles with scallops. Serve with asparagus. Top with grated pecorino romano if desired. Enjoy!
